Keeping with a low-carb diet is simple and fun when you plan and realize it doesn’t take much effort to provide yourself, friends and family with good tasting food on the cheap with the right ingredients. Low Carb This! Restarting while Keeping a Fun Low Carb Lifestyle!

Whenever we need to restart our low-carb lifestyles and keep our dieting interesting, it’s a good idea to keep fresh and tasty food on hand. 100 Day Challenge – Day054 – CARS – Carb Addict Realization Sunday

Sunday’s are always a deadline focused part of the weekend as time shifts towards the workweek and I like to “frog list” responsibilities and get the week off to a good start. My diet took a beating this weekend. There’s a lot on this week’s agenda, including a great deal of road time during this snowy blizzard week. Most important is finding some new business opportunities and getting in the gym!

Low Carb This! Chocolate Brownies Protein Powder Edition

Picking up where the low carb brownies left off with a higher-protein extra chocolaty version! Check out how easy this is to make too. You’ll want to let these ingredients sit for an hour at room temperature for the best results. Shopping List: 8oz Unsweetened Baking Chocolate 1/2 Pint Heavy Whipping Cream Tablespoon Vanilla Extract 1.5 Sticks of Salted Butter Half Cup PB2 (if you have) 2 Cups of Protein Powder 1 Tablespoon Cinnamon 8 Oz. Chopped Walnuts Half Dozen Large Eggs 1 Cup Half and Half 1 Cup of Carbquick 2 Cups of Splenda Or experiment. This happened to turn out real good. If you try some variations, please share them here so we can all eat more delicious things. Melt baking chocolate and butter in a small pan on low-medium setting until melted. When liquid, turn to lowest setting and add the splenda. Prepare the protein powder, eggs, liquids, carbquick (and optional PB2) into your mixmaster bowl. Do not add cat. Low Carb This! – Low Carb Quichecake

Low Carb Quichecake! Traditional cheesecake, with lots of extra cream cheese and eggs. 3 8oz Cream Cheese 1.5 Sticks Butter 1 tsp Cinnamon 1 tbsp Vanilla 1 pt Heavy Cream 1 cup Sour Cream 8 oz Chopped Walnuts 2 Cups Splenda 8 eggs Let the cream cheese, eggs and butter warm to room temperature. First, grind walnuts, splash of soymilk, cinnamon melted butter and splenda (I used the ‘magic bullet’) and spread this with a spatula into pre-greased (used butter flavored non-stick cooking oil) and bake at 325 for about 7-8 minutes to form your ‘crust’. Be careful not to overcook. While that was going on is when you’ll be combining all ingredients, using your electric mixer at slow speed, increasing gradually to medium while pushing the sides constantly using a spatula. Bake for around an hour (checking on it regularly) and allow to cool overnight in your refrigerator before serving. Feel free to experiment, this turned out absolutely delicious! Frogs are the metaphor during the 100 days the100days.com for things that need to be accomplished daily and today being the weekend is no exception. Sunday’s are great for focusing on week preparedness. Gaining traction before a crazy work week. I took some time today to drop into my recently addictive destination of Wolff’s flea market. Terrie has some great spices that have allowed me to best enjoy my low carb dieting.

Low Carb This! Shopping Sweets and Baking Treats… Chocolate Muffins!

Low-Carb This! lowcarbthis.com as I’m learning ways to creatively enjoy a lower carbohydrate lifestyle with some delicious eats! I’ve explored the supermarket to find some various low carb surprises to work with. Today I’m making up some chocolate cupcakes. I’m going to try some more variations of this in the future too with some protein powders for additional protein. Overall I’m very pleased with how these turned out. Watch video for details and here’s the ingredients 1 Stick of Butter 6 Oz Baking Chocolate 2 Cups Splenda 2 Teaspoons Vanilla 5 Large Whole Eggs 3/4 Cup CarbQuick 1 Cup Chopped Walnuts 1/2 Cup (optional) PB2 powdered peanut butter) I mixed all these ingredients in the mixmaster with a little soy milk (you can use water and you may not even need) and poured into a flexible non-stick muffin pan. I used a butter flavor enhanced non-stick spray because butter anywhere anytime is just awesome! Cook at 350 for 10-20 minutes (until a toothpick comes out clean). Tasty, you won

100 Day Challenge – Day046 – RHT (Rapid Human Transformation!) – WUTOS!?

WUTOS – Weekend Update Today on Saturday

I’ve had a good week. Lot’s of driving. Eating lots of interesting things. I’ve been to new restaurants, corporate buffets, sushi, even cooked up a lot of my own good low carb eats. Even on the road I’ve been eating well. I’ve stayed in nice hotels, even seen some cool bars. Lots of running around trying to find more business.

Through all of this I’ve managed to drop 15 pounds and eager to drop more!

This weekend I’ll be catching up with frogs, eating, cheating on my diet, playing with the cats, eating more, and making time for fitness. I’m looking to increase exercise throughput during these coming days so expect some early morning workouts!

I’m going to cheat more on my low carb today as that’s what I’m supposed to do today, but to kick the fat burning into 3rd gear so to speak for the coming week I’m considering a much more aggressive near no carb digression. I’m very food obsessed. I think I’m going to go for a nice juicy hamburger.
